| Meat, fish and vegetables – the santoku knife’s ability to handle all three major cutting jobs in the kitchen give the knife its name (san = three, toku = virtues, advantages) and accounts for its popularity with home chefs. The santoku style is essentially a shortened, rounded gyutou (literally “Beef Knife”). Whereas the gyutou chef ’s knife is long and pointed to slice through big cuts of meat and other ingredients, its long, curving edge can be daunting for home users, especially when dicing and chopping vegetables. |
