Usually stainless steel knives are constructed from one type of steel.These knives unite traditional techniques with modern technologies. Two different compounds of high quality rust-resistant steel are compressed together rather than hammered and forged. This results in an extremely high density blade with superior sharpness. Nenohi’s perfect knife: a uniformly stain-resistant blade that has both the sharpness and hardness of forged high carbon steel, the kirenaga of a honyaki blade and the durability and sharpening ease of a kasumi knife.
