Preparation
  • Allow the charcoal sit over a direct flame for 30 minutes to an hour. Korin recommends using a binchotan starter pan for convenience.
  • Fan the charcoal to heat faster.

Caution

Please do not burn charcoal indoors, only in well ventilated areas. All types of burning charcoal will produce odorless Carbon Monoxide gas. For best result, keep in cool and dry environments. Damp charcoal may take longer to ignite and may be hazardous.

Kishu binchotan is made in the city of Tanabe in Wakayama prefecture, and is the most widely recognized as the finest quality binchotan available in the world. The municipality is dedicated to maintaining the quality born of tradition in all its binchotan production by using ubame oak wood. The Kishu white binchotan hanmaru are halved pieces of the kishu binchotan, and will therefore be easier to light than the komaru.

Binchotan charcoal has become so popular lately that it is fast becoming a precious commodity.
